SLOW COOKER TURKEY BARLEY SOUP


Don't know what to do with all that leftover turkey? Here is my Turkey Barley Soup recipe.

6 Cups Chicken Broth (or homemade stock)
1-2 Cups diced Turkey (or chicken)
1/3 Cup Pearl Barley
1/2 Cup Chopped Onion
2 Celery Stalks, sliced
3 Carrots, sliced
1-2 Bay Leaves
1 tsp Thyme
2 tsp dried Parsley
Salt & Pepper to taste.

Cook in slow cooker on low for 6 hours. I love my slow cooker!!

NOTES: When I made mine on Monday, I also added a whole turkey leg, all the meat fell off when the soup was done. Just remove the bones and skin, but I believe doing this added some extra flavor, and I will do this for now on.

Is pearl barley hard to find? I've never heard of it.

I bet your house smell amazing while it's cooking!
