SHINY & NEW



While I was in Alberta our new stove was delivered. Our old one had broke again and instead of paying a few hundred dollars to have it fixed again, we decided to get a new one. There was a bit of an issue with the hook-up, but eventually, the Saturday I was back, it was good to go.

We had plans to go out for dinner with friends on Saturday, and I was using the slow-cooker Sunday. Monday, it being my first day back to work after vacation, I had just planned on throwing a frozen pizza in the oven when I got home. I didn't want the first thing I cooked with the new stove to be a frozen pizza!

I decided on a very simple recipe that I make quite often in the warmer months, "Salsa Chicken Thighs". I like this recipe because it's good with a variety of sides and served warm or cold.

It turned out great and I look forward to more cooking with my new shiny stove.

SALSA CHICKEN THIGHS

1 Cup Orange Juice
1 Cup Salsa
1 TBSP Soya Sauce
1 Tsp Honey or Brown Sugar
8 Skin-less Bone-in Chicken Thighs

Stir first four ingredients in a 9x13" casserole dish. Add chicken, turning to coat. Bake at 425 for 30-45 minutes uncovered.
